Petits fours secs
The rectangular white box is approximately 19 x 14.5 cm in size. Once you open the lid, remove the sealing stamp, and lift the paper, you are instantly hit with an extraordinary aroma. You are now drowning in happiness.
”Petits fours secs,” an assortment of cookies, is made using a recipe by Jean Claude Cordier, a French chef pâtissier who worked at RIHGA Royal Hotel from the 1970s to the 2000s. All ten varieties are unique in shape, ingredients, and texture, including galette nantaise, traditional French sweet cookies, and cheese batons, a perfect snack to go with alcohol.
How do they make them? Take the cigarette cookies on the top right in the pictured box as an example. First, bake thin spread dough in the oven, then roll it into a stick shape using a mold while it is still hot. The attention to detail and ingenuity that go into these small baked goods are extraordinary.
These ten varieties of cookies, all of which I consider “the best,” are all handmade, so only a few boxes are available each day. This exquisite assortment makes me want to tell you all about the deliciousness of each one. There are many assortments of cookies from confectionary stores and restaurants, but for me, this is truly a must-buy.
